Named after the local Hornbach River, Michael Spycher receives milk from 12 local farms twice a day to make this cheese aged 12 months. The cows graze on summer pasture and eat winter hay, allowing for a true sense of terroir. You'll get flavors of buttery, baked potato, caramelized onions, an hazelnuts with crunchy protein crystals.
